I worked in an expensive tea house and cafe where we were forced to recycle customers’ jams. We would serve a scone with clotted cream and jam.

Then, when we cleared the plates, any leftover jam went into the jam bucket by the dish wash. This jam was then used for the jam layer in the $6.70 per slice Victoria sponge cake.
